Ingredients
- Whole-grain spelt flour, 1 1/2 cups (195 g)
- Oat flour, 1 cup (110g)
- Hemp seeds, 2/3-3/4 cup
- Cinnamon, 1 1/2 - 2 tsp
- Sea salt, 1/4 tsp
- Ground cardamom, 1/4 tsp
- Baking powder, 2 tsp
- Baking soda, 1/2 tsp
- Unsweetened applesauce, 1 cup
- Plain non-dairy milk, 3/4 cup
- Maple syrup, 1/4 cup
- Original recipe called for 1/2 cup
- Vanilla extract, 1 1/2 tsp
- Raisins, 1/3 cup
Cooking
- Preheat oven to 350deg
- In large bowl combine flours, hemp seds, cinnamon, sea salt, and cardamom
- Sift in the baking powder and baking soda
- In a medium bowl, combine applesauce, milk, maple syrup, vanilla extract, and raisins - mix all together
- Fold the wet mixture into the dry mixture, stirring until just combined
- Put in muffin tin
- Cook for 21-23 minutes, or until a toothpick inserted in the center comes out clean
