Ingredients
- Whole-grain spelt flour, 1 cups + 3-4 Tbsp
- Oat flour, 3/4 cup
- Baking powder, 2 tsp
- Baking soda, 1/2 tsp
- Cinnamon, 1/2 tsp
- Ground Nutmeg, 1/2 tsp
- Sea salt, 1/4 tsp
- Pureed overrip banana, 1 cup
- Plain non-dairy milk, 1/2 cup
- Maple syrup, 1/3 cup
- Vanilla extract, 1 tsp
- [Optional] Chocolate chips, 3-4 Tbsp
Cooking
- Preheat oven to 350deg
- In large bowl combine flours, baking powder, baking soda, cinnamon, nutmeg, and sea salt
- In a medium bowl, combine pureed bananas, milk, maple syrup, and vanilla mix all together
- Fold the wet mixture into the dry mixture, stirring until just combined
- Add the chocolate chips and stir
- Put in loaf pan
- Bake for 43-48 minutes, or until a toothpick inserted in the center comes out clean
Notes & Tips
- Can also be made into muffins - bake for 17-20 minutes
