Ingredients
- Rolled oats, 1 cup
- Oat flour, 1 cup
- Baking Powder, 1 tsp
- Cinnamon, 1/2 tsp
- Sea salt, 1/4 tsp
- Grated Nutmeg, 1/8-1/4 tsp
- PUreed overripe banana, 1 cup (~2 large bananas)
- Vanilla extract, 1 1/2 tsp
- Non-dairy chocolate chips, 3 Tbsp
- OPTIONAL: add chia or flax
Cooking
- Preheat oven to 350deg
- In large bowl combine oats, oat flour, baking powder, cinnamon, sea salt, and nutmeg
- Add the pureed bananas, vanilla extract, and chocolate chips to the driy mixture, stir until combined
- Place 2-Tbsp scoops of batter on a lined cookie sheet
- Bake for 13-14 minutes, or until just firm to the touch
