Ingredients
- Group 1
- Whole grain spelt flour, 2 1/4 cups (285g)
- Coconut sugar, 1/4 cups
- Cinnamon, 1 tsp
- Allspice, 1/2 tsp
- Sea salt, 1/4 tsp
- Ground ginger, 1/4 tsp
- Baking powder, 2 tsp
- Baking soda, 1/2 tsp
- Blackstrap molasses, 2 Tbsp
- Unsweetened applesauce, 1/2 cup
- Plain non-dairy milk, 3/4 cups
- Maple syrup, 1/3 cup
- Vanilla extract, 1 tsp
- Blueberries, 2/3 - 3/4 cup
Cooking
- Preheat oven to 350°
- Line muffin tin
- In a large bowl, combine the Group 1 ingredients
- Sift in the baking power and baking soda
- Stir until all is well combined
- In a medium bowl, combine molasses and applesauce
- Whick in the milk, maple syrup, and vanilla extract, mixing together
- Fold the wet into the dry and mix until just combined
- Fold in the berries
- Spoon into muffin tin
- Bake 22-24 minutes
