- Food processor

Ingredients
- Garbanzo beans (chickpeas), 15oz rinsed and drained
- Medjool dates, 1 cups
- Oats, 1/2 cup
- Eggs, 3
- Vanilla, 1 tsp
- Coconut oil, melted, 1/4 cup
- Baking powder, 1 tsp
- Baking soda, 1 tsp
- Fresh Blueberries, 1.5 cups
Cooking
- Preheat oven to 350°
- Grease muffin tin
- Place dates in bowl with 1 cup water, microwave on high for 2 minutes; drain water
- Process dates and chickpeas until smooth
- Add remaining of ingredients except blueberries and process into batter
- Stir in blueberries
- Spoon into muffin tin
- Bake 20-25 minutes
