Ingredients
- Whole-grain spelt flour, 1 1/2 cups (195 g)
- Almond flour, 1/2 cup
- Cocoa powder, 1/4 cup
- Orange zest, 1 1/2 - 2 tsp
- From 1 large or 2 small oranges
- Sea salt, 1/4 rounded tsp
- Baking powder, 1 1/2 tsp
- Baking soda, 1/4 tsp
- Pureed overripe banana, 1 cup
- Should be about 2 large overripe bananas
- Freshly squeezed orange juice, 1/2 cup
- Maple syrup, 1/2 cup
- Vanilla extract, 2 tsp
- Non-dairy mini or regular chocolate chips, 1/4 cup
Cooking
- Preheat oven to 350deg
- In large bowl combine flours, cocoa powder, orange zest, and sea salt
- Sift in the baking powder and baking soda
- In a medium bowl, combine pureed banana, orange juice, maple syrup, and vanilla extract - mix all together
- Fold the wet mixture into the dry mixture
- Add in chocolate chips
- Stir until just combined
- Put in muffin tin
- Cook for 17-19 minutes, or until a toothpick inserted in the center comes out clean
