Ingredients
- Dried red lentils, rinsed, 1 cup
- Water, 2 cups
- Garlic, 1-2 medium-large cloves
- Tahini, 3 1/2 - 4 Tbsp
- Sea salt, 1 tsp
- Ground coriander, 1 tsp
- Lemon zest, 1/2-1 tsp
- Paprika, 1/4 tsp
- Red Wine Vinegar, 2 Tbsp
- Lemon juice, 1 Tbsp
Cooking
- Place lentils and water in large sauce pan
- Bring to a boil, then reduce heat to simmer and cover
- Cook lentil until water is absorbed, about 20 minutes
- Let lentils cool for 30 minutes
- Add lentils and all other ingredients to food processor, puree until smooth
- Enjoy now or let thicken in the refrigerator first
